Chiang Mai Pumpkin Curry & Purple Sprouting - Going BIG on the autumn ingredients this week. There are so many butternut squash on our allotment, so I thought I’d make the most of them, giving them a fiery Thai twist thanks to the @bluedragonuk Thai Red Curry Paste. Finished with one of my all-time favourite ingredients, purple sprouting, as well as toasted peanuts and pumpkin seeds. It’s fully vegan yet still packs 20gs of protein, winning! Lemongrass, coconut and grilled chicken curry. A beautiful, warming Thai dish that is just perfect for these cooler autumn days. It’s packed with so much goodness too, our allotment just keeps on giving! We’ve got a steady supply of delicious cavolo nero so this curry is loaded up with plenty of it, although regular kale, purple sprouting or even good old sprouts would work great too! Autumn has arrived on the blog! With my tiny toddler helper, I just picked my first ever home-grown squash and it was deeeelish. I made a silky smooth purée then topped it with spicy lamb koftas, chermoula and the roasted seeds from the squash. Really simple but as comforting and homely as it gets. Not to mention healthy too! Roasted tenderstem has got to be one of the best sides EVER! Super healthy, super easy and so so tasty. I cooked a beautiful rack of lamb from the farmers’ market in Stroud, then served it with this delicious broccoli dressed with a touch of oil, mustard seeds, chilli and red onion. Winning! Hope everyone’s loving the weekend
